Serves 8

  • 4lbs Flanken or Shin Meat
  • 2 onions, thinly sliced
  • 3-4 cloves garlic, thinly sliced
  • 4 tablespoons tomato paste
  • 4 cups beef stock
  • 28oz can diced tomatoes
  • 5 cups sliced cabbage
  • Olive oil
  • 1/4 cup brown sugar
  • 1/4 cup apple cider vinegar

 

Brown the meat and onions

Heat a small amount of olive oil in a large stock pot or instant pot, and brown meat.  Set aside.

Add onions & garlic to the pot, and cook until translucent.  Add tomato paste and cook for 1 more minute, then add beef stock and scrape up all browned bits.

 

Put it all together and simmer — choose your method

Add diced tomatoes, cabbage and the meat back to the pot.

To cook in an Instant Pot: cook on high pressure for 40 minutes.

To cook on the stove top: bring to a simmer and cook for 2+ hours, or until meat is tender.

To cook in a crock pot: cook on “low” for 8 hours.

 

To serve

Combine brown sugar and apple cider vinegar, then add to soup to taste just before serving.
