Serves 8
- 2-3 packages Za’atar Chicken Drumsticks, Berbere Chicken Drumsticks, or a combination (12 pieces total)
OR
- 2 packages Chicken Drumsticks (10-12 pieces total)
- 3-4 tablespoons your favorite spice mix
- 3-4 tablespoons olive oil
- 1 teaspoon salt
If not using pre-marinated drumsticks, combine spices, oil and salt and coat drumsticks thoroughly. Marinate 30min-2hrs in the fridge.
Bring chicken to room temperature.
To cook on a grill:
Prepare a grill for direct/indirect heat. Sear drumsticks over high heat, 3-4 minutes per side, until skin is golden and crisp.
Transfer chicken to cooler side of the grill and cover. Cook, turning occasionally, until meat is cooked through and tender, about 20-25 minutes.
To bake in the oven:
Preheat oven to 300F convection roast, or 350F bake.
Arrange chicken in a single layer in an oven-proof baking dish.
Bake 25 minutes, then flip. Check after another 20-35 minutes or so — meat should be tender to the touch, and bones should wiggle freely. Baste with pan juices if desired.
Serve immediately.
