Matzah-Covered Chicken Cutlets
Chicken Schnitzel with a matzah crust is a great option for dinner over Passover. Chicken cutlets are easier to cook when they are thin and uniform. If not using Thin-Cut Chicken Breast filets, you can either: carefully slice your chicken breast filets in half, vertically, to make two, thinner pieces. This is much easier to do when the meat is partially frozen. Alternately, place chicken between two pieces of waxed paper and use a meat pounder to pound to uniform thickness.
