Makes enough to cover 1 whole brisket for smoking.
- 1 cup white sugar
- 1 cup brown sugar
- 2 tablespoons garlic powder
- 2 tablespoons chili powder
- 2 tablespoons Colman’s mustard
- 2 tablespoons oregano
- 2 tablespoons chili flakes
- 2 tablespoons onion powder
- 2 tablespoons paprika
- 2 tablespoons cumin
- 4 tablespoons coarse black pepper
- 2 tablespoons coarse sea salt
- 2 tablespoons instant coffee
Combine all ingredients. Trim brisket to your preference, and pat dry. Cover liberally with rub and then smoke according to these directions.
