- 1 Boneless Turkey Breast Filet
- 2 packages Beef Bacon
- 4 tablespoons olive oil
- 1 teaspoon maple syrup (optional)
- 1 clove garlic
- 1 sprig fresh thyme
- Salt & pepper
Preheat the oven to 325F. Prepare a baking sheet by wrapping with aluminum foil. Place a wire roasting rack on top of the pan.
In a small bowl, whisk together the olive oil, garlic, thyme and salt and pepper and syrup if using. Brush half the mixture over the top and bottom of each turkey breast filet.
Weave the bacon strips over the top of each turkey breast. Start with two strips, crossed over each other at 90’. Add strips in each direction, weaving pieces over and under, until skin side is covered. Tuck ends of bacon strips under the turkey breast securely.
Brush top with remaining marinade.
Place the wrapped turkey breasts on the roasting rack, bacon-side up, and bake for 30 minutes (until the internal temperature reaches 165F).
If bacon needs crisping, broil for 3 minutes or use a kitchen torch.
Allow the turkey to rest for five to 10 minutes before slicing.
