- 1 tbsp red wine vinegar
- 2 tbsp balsamic vinegar
- 1 tbsp Dijon mustard
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 garlic clove, minced
- 1 ½ tsp brown sugar
- ½ cup olive oil — more to taste
Combine all ingredients in a glass jar and shake vigorously.
We love the combination of thinly sliced dates, citrus or olives for tang, and cucumbers for juiciness in a simple salad. Pomegranate arils, pumpkin seeds, sunflower seeds or sunflower shoots would also be great additions to this salad. We make a 4x batch of this salad dressing to have on hand -- it makes it much easier to add salad to a busy weeknight meal if there is salad dressing around. You can also mix everything without the olive oil to keep as a ‘concentrate’ and just add olive oil as needed.
