Serves 6-8
- 1 pkg Thin-Cut Grow and Behold Beef Bacon or Lamb Bacon
- 12 Medjool dates, pitted and halved
- 1/2 cup Simple Techina (recipe below)
Fill date boats with techina (recipe below). Wrap half a piece of bacon around and secure with toothpick.
Cover baking sheet with foil and arrange dates on top. Bake at 350F for 10-15 min, or until bacon is crispy and fat is rendering.
If your dates are large, cut them in half and skip the techina filling — they’ll be just as good!
Simple Techina
- 16oz tahini
- 4 cloves garlic
- Juice from 1-2 lemons
- Water (amount varies)
- Cayenne pepper (to taste)
- Salt (to taste)
Chop garlic in food processor until fine. Add tahini and lemon juice, blend until combined. Add water slowly until desired consistency is reached (about 1-2 cups). Add salt and cayenne to taste. (We keep our techina relatively thick and store it in the fridge. For sauces and dressings, thin a few spoonfuls with water, and add fresh herbs.)
Spinach Salad with Beef Bacon-Maple Vinaigrette

Serves 6-8
- 1 bag baby spinach
- 2 eggs, hardboiled and thinly sliced
- 1/2 red onion, thinly sliced
- 3 parts warm Beef Bacon fat
- 1 part maple syrup
- 1 part apple cider vinegar
Combine spinach, eggs and onions in large salad bowl; set aside. Combine maple syrup and cider vinegar in a smaller bowl. Add hot bacon fat and combine; add to salad as soon as possible (you want to add the dressing while it is still hot). Combine (eggs will not looks as pretty, but will contribute to overall creaminess of the dish). Garnish with a few sprigs of red onion if desired.
