• 5-6lbs Chicken Drumsticks, or Chicken Leg Quarters
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp pepper
  • ¼ cup balsamic vinegar
  • ¼ cup maple syrup
  • 12 oz jar of apricot preserves

 

Preheat the oven to 325F.

Combine onion powder, garlic powder, paprika and pepper in a small bowl.

Lay the chicken out in a large baking dish. Sprinkle each chicken piece with half of the spice mixture, reserving the rest.

Bake for 30 minutes, uncovered. Remove from oven, flip the pieces and sprinkle the other side with remaining spices. Bake for another 10 minutes.

In the mean time mix the balsamic vinegar, maple syrup and apricot preserves in a bowl with a whisk.

After the ten minutes has elapsed, remove the chicken from the oven again to glaze them with this mixture.

Bake for another hour.

Give the chicken a crispy finish by putting it under the broiler for 5 minutes.
