• 1 Grow & Behold Skirt Steak
  • 8 teaspoons freshly-ground dried Ancho chiles
  • 8 teaspoons freshly-ground dried chipotle chiles
  • 4 teaspoons ground coffee
  • 2 teaspoons toasted garlic powder
  • 2 teaspoons toasted onion powder
  • 2 teaspoons celery salt
  • 2 teaspoons sugar

Test for salt
If you are sensitive to salt, you may wish to soak the skirt steak a few times in cold water.  Skirt is kashered separately, and can therefore be a saltier steak. Not sure?  Cut off a tiny strip and fry it up to taste it.  If it’s too salty, you can soak it in cold water for 30 minutes before proceeding with the recipe.

Season the Steak
Combine all ingredients in a jar with a resealable lid.  Pat steak dry, then sprinkle seasonings all over both sides, reserving any extra spices for future use.

Grill, Fry or Broil
Skirt Steak does well when cooked over high heat to develop a crust, then finished over indirect or lower heat to tenderize the meat.  Use your favorite method.
