Serves 4-6

  • 3 lbs Spare Ribs
  • 3 tablespoons lemon juice
  • 2 tablespoons honey
  • 2 tablespoons vegetable oil
  • 1 tablespoon soy sauce
  • 1 tablespoon diced onion
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1/8 teaspoon garlic powder

 

In the oven

Season ribs with salt and pepper and bring to room temperature.  Place ribs, bone side down, on a rack in a shallow roasting pan. Cover and roast at 350 degrees F for 1 hour — or if you have the time, roast at 275 for 2 hours or more until tender.

Drain the juices from the pan and discard.  Combine remaining ingredients in a bowl to make the glaze.  Brush some of glaze on ribs. Roast at 350F, uncovered, 30-45 minutes longer or until meat is tender, brushing occasionally with remaining glaze.

 

On the grill

Season ribs with salt and pepper and bring to room temperature.  Set up your gas or charcoal grill for indirect cooking, with a hotter side and a cooler side.

Cook ribs over indirect heat for 45-90 minutes, turning occasionally, until meat is tender and bones feel lose.

Combine remaining ingredients to make the glaze. Paint onto ribs and transfer to hot side of the grill, 3-5 minutes. Flip and paint the other side. Continue flipping and painting until exterior is crisp and caramelized, 2-3 more times.
