- 2lbs Ground Beef
- 2 tablespoons ground cumin
- 1 tablespoon ground sumac
- 1 teaspoon Aleppo pepper
- 1 teaspoon garlic powder
- 3 tablespoons plus 1/3 cup olive oil
- 3-4 onions, thinly sliced
- 3 cups hummus
- Parsley, chopped for garnish (optional)
- Rice or pita, for serving
Caramelize the onions
In a small bowl, combine cumin, sumac, Aleppo and garlic powder.
Heat 1/3 cup olive oil in a wide saucepan. Add 1 tablespoon of spice mixture and cook for about 30 seconds to let the spices bloom. Add onions and stir to coat with spices. Cook gently at low temperature for 10-15 minutes until onions are very soft and sweet. Set aside. Don’t wipe out the pan.
Cook the meat
Return the pan to the stove. Add 3 tablespoons olive oil and heat over medium heat. Add ground beef and use a spatula to cut up into small pieces as it cooks. Season with remaining spice mixture and cook, stirring occasionally, until meat is cooked through, about 6-10 minutes.
To serve
Spread hummus on a platter. Spoon meat on top, and put onions on top of the meat. Garnish with parsley, if using and fresh olive oil. Serve with rice or pita.
