Serves 3-4
Lamb Skewers:
- 1 lb Ground Lamb
- 3 tablespoons pine nuts
- ½ cup chopped mint
- 2-3 scallions finely chopped
- 1 large egg
- 1 teaspoon baking powder
- ½ teaspoon cinnamon
- 1 teaspoon cumin
- 1 teaspoon nutmeg
For the Cucumber Salad:
- 3-4 spiralized Persian cucumbers
- 2- 3 radishes
- ¼ cup diced red onions
- ¼ cup chopped dill
- Olive oil
- ½ tea spoon salt
- Fresh ground pepper to taste
- 1 teaspoon red wine vinegar
- Juice and zest of ½ lemon
For the Tzatziki:
- 1 cup non-dairy sour cream
- ¼ cup chopped mint
- 2 fresh garlic cloves
- Juice + zest of one lemon
- Salt + pepper to taste
Make the skewers
In a large bowl combine ground lamb, mint, scallions, eggs, nutmeg, cinnamon, salt. Stir to combine. With your hands shape small hand full of the mixture in football shaped rounds. Place on hot grill for 5-6 minutes or until cooked through. Take skewers and thread through the middle.
Make the Tzatziki (Mint “Yogurt” Sauce)
Combine all ingredients in a bowl, blend in food processor, add salt and pepper to taste.
Make the Cucumber Salad
Combine all ingredients in large bowl. Toss to combine.
Serve lamb with sauce, salad and flatbreads (make your own, or throw some store-bought ones on the grill to get good char and grill marks!)
