Marinade:

  • 1 cup soy sauce
  • 1 cup orange juice
  • 1 tablespoon Worcestershire
  • 1 tablespoon mirin
  • 1 tablespoon cider vinegar
  • 1 tablespoon maple syrup
  • 1 tablespoon crushed red pepper
  • 4 cloves chopped garlic

Sauce:

  • 1 cup mayo
  • 1/4 cup soy sauce
  • 1/4 cup ketchup
  • 1/4 cup Dijon mustard
  • 2 tablespoon lime juice
  • 2 tablespoons sesame oil
  • 2 tablespoons chopped chives

Combine marinade ingredients in a zipper-top bag. Add steak and marinate 24 hours, turning occasionally.

Grill the steak to medium rare and let it rest.

Combine sauce ingredients.

Slice steak thinly. Assemble sandwiches with slices of steak, sauce, pretzel buns, arugula, sliced red onion, sliced pickles and/or fried egg. Garnish with microgreens or fresh herbs.
