• 1lb Grow and Behold Turkey Fennel Sausage, cut on the diagonal into ~1″ pieces
  • 2 small, crisp red apples, roughly chopped
  • 2 leeks, cleaned and roughly chopped
  • 2 waxy, yellow potatoes, roughly chopped
  • 8 sprigs of fresh thyme
  • 2 tablespoons of olive oil
  • Salt and pepper, to taste

 

Preheat an oven to 425F. In a large roasting pan, toss the apples, potatoes, leeks, and thyme with the olive oil and seasonings. Bake for 15-20 minutes, until vegetables are starting to soften and brown.

Remove pan from oven and give vegetables a stir. Add sausages. Return to the oven, and cook for another 10-15 minutes, until the sausages have browned and vegetables are caramelized.
