- 2 eggs
- 3/4 cup sugar
- 1/2 cup oil (olive oil or grapeseed oil)
- 1 tablespoon vanilla extract or almond extract
- 3 cups all-purpose flour (or 2 cups all-purpose flour and 1 cup white whole wheat flour)
- 1 teaspoon baking powder
- 1/2 teaspoon salt
In a large bowl, combine eggs, sugar, oil and vanilla. In a separate bowl, combine the baking powder, salt and flour, then add to wet ingredients. Form into a flat disc and refrigerate until firm, 2hrs or overnight.
To shape cookies, flour a surface and then roll dough to 1/4″ thick. Use cookie cutters to cut out shapes and transfer to a baking sheet lined with parchment paper. Decorate with sprinkles if you like!
Bake at 350F for 7-10 minutes, until edges are lightly browned. Let cool 2-3 minutes on the baking sheet, then transfer to a wire rack to cool completely.
