- 9 eggs, separated
- 1 cup sugar
- 1 cup ground almonds
- 1/2 cup chopped almonds
- 1 tablespoon potato starch
- 3 tablespoons sifted matza cake meal + more for dusting pan
- 1 tablespoon powdered instant coffee
- 4 oz coarsely grated bittersweet chocolate
- 1 orange rind, grated
Preheat oven to 350F. Grease and flour (with matza cake meal) 10″ tube pan and set aside.
Beat whites until foamy. Slowly add 1/2 cup sugar. Beat until stiff but not dry.
In another bowl, beat yolks with 1/2 cup sugar. Fold into whites.
In another bowl, combine almonds, potato startch, matza cake meal, instant coffee, chocolate and orange rind. Fold into egg mixture.
Pour into prepared pan. Bake 45 min or until toothpick inserted into the center is clean.
